How to prepare
Pressure-cooker method+
- 1Add 60 g of the khichdi mix to the pressure cooker.
- 2Add about 180–210 ml water (more for a softer consistency).
- 3Add salt to taste; optionally add vegetables, spinach, coriander or a teaspoon of ghee.
- 4Pressure-cook for about 3 whistles.
- 5Let the pressure release naturally, stir and rest 3–5 minutes.
- 6Serve with curd, vegetables, pickle or a protein side.
Open-pot method+
- 1Add one measure of mix to about three measures of water.
- 2Bring to a boil, cover and simmer on low for 15–18 minutes.
- 3Stir occasionally, adding hot water if needed, until grains and dal are soft.
- •For seniors, use more water and cook to a softer consistency.
- •Vegetables add volume, flavour and make the meal more complete.
