How to prepare

Standard adai+
  1. 1Add 60 g of mix to a bowl.
  2. 2Add about 90–110 ml water gradually into a thick, pourable batter (optionally a tablespoon or two of curd).
  3. 3Rest the batter for 15–20 minutes.
  4. 4Add chopped onion, coriander, carrot, spinach or green chilli if you like; salt to taste.
  5. 5Heat and lightly grease a tawa; pour and spread into a thick adai.
  6. 6Cook on medium until the edges firm up, then flip and cook through.
  7. 7Serve hot with chutney, curd or sambar.
Softer pancake+
  1. 1Use slightly more water and optional curd; keep the batter medium-thick.
  2. 2Cook smaller pancakes on medium-low heat, covering briefly on the first side.
  • The mix is coarsely milled, not a fine flour — batter hydration varies a little with flaxseed.
  • For a higher-protein meal, serve with curd, paneer, eggs or a dal-based chutney.
